In the Kitchen:


Chicken & Stuffing Bake

4-6 pieces of boneless chicken
1 can Cream of mushroom soup
1 box instant stuffing mix- cornbread
1 box instant stuffing mix- savory or chicken flavor
Water called for on stuffing boxes
Mix water and stuffing mixes in a bowl and set aside
In foil lined pan, Place chicken pieces
Spoon soup over chicken and spread around to cover
Top with stuffing mixture
Bake at 375 for 40 minutes or until Chicken is done and stuffing is bubbly/browned.
I serve this with green beans.

Episode 60: Friendly Rambles

In the kitchen:

Apricot Chicken

In big foil pan put:
1 bag chicken tenders
1 jar Catalina dressing- can use light
1 jar apricot preserves- can use sugar free
1 pkg onion soup mix
Water
Dissolve preserves, dressing and onion soup mix
Pour over chicken in pan
Cook for 40-50 minutes on 375 or until chicken is done.

Serve over rice or egg noodles

Episode 59: The Non-Crappy Version

In the Kitchen:

Garbage Soup

2 boxes of stock- your choice
1 box water
1 pkg noodles- your choice (about a cup of macaroni)
1-2 cups Leftover veggies
1-2 cups Leftover meat

Throw together stock in a pot everything but the noodles and bring to boil. Simmer for about 10 minutes to meld flavors.
Add noodles and cook according to package directions.
Serve with hot rolls or per Boo- sourdough bread

Cooking School:

Picking up and finishing

In the Kitchen:

Chip Chicken

4-5 boneless chicken breasts cut in half
1/4 cup mayo
1/2 package taco seasoning
1/3 bag of tortilla chips crushed
1/2 cup shredded cheese
mix taco seasonings and mayo. Slather chicken in it and then roll in chips. Place on foil lined cookie sheet and bake for 30 minutes at 375 degrees. Put cheese on top and cook an additional 5-10 minutes. I serve this with Spanish rice and mixed veggies or a salad. Easy and yummy.
Note: you can use ranch dressing and BBQ or sour cream & onion potato chips instead for a
different flavor.
